Honey Poached Beets · GF ()
I made these for my post on Vegetables for dessert.
Make two batches, one with golden beets and one with red, for an autumn leaf jumble of color next to "Candy Corn" Panna Cotta. They have a deliciously sweet flavor!
I also enjoy these tremendously when warmed and spooned over ice cream with crunchy Pumpkin Spice Cookies on the side.
5 ounces water
2 ounces sugar
1 ounce honey
½ reserved vanilla bean (leftover from the Panna Cotta )
3 ounces diced golden beets, go local if you can!
Combine the water, sugar, honey and vanilla bean in a small pot. Bring to a simmer and stir until the sugar is dissolved. Add the diced beets and simmer on medium low heat, partially covered, until the beets are tender and the syrup has reduced, about eight minutes.
Sever immediately or store in a jar, refrigerated, for later use. Warm gently before serving.
